Michelin-Starred Chef to Lead Tivoli Palazzo Gaddi Firenze's Staff

Tivoli Palazzo Gaddi Firenze in Florence, Italy, has announced a new collaboration with Michelin-starred chef Iside De Cesare. Currently helming the one-Michelin-starred restaurant La Parolina in Trevinano, Chef De Cesare joins the hotel as executive chef of its culinary program with the support of Resident Chef Salvatore Canargiu. Together, they have created menus that celebrate both Italian culinary tradition and innovation.

The luxury palace-turned-hotel, dating to the 16th century, offers three gastronomic experiences—Terrae Restaurant, Aria Rooftop and Milton Bar. Terrae Restaurant, the hotel’s fine-dining establishment, has a menu that explores the roots of Tuscan and Italian cuisine with a contemporary twist. Guests can dine à la carte or enjoy a signature tasting menu in the classic dining room or courtyard garden.

Open from sunset for aperitivos, Aria Rooftop offers 360-degree views of Florence. The menu of wines, champagnes and signature cocktails is complemented by small plates including seafood charcuterie, Tuscan snacks and Chef De Cesare’s “Bolla,” a crispy light spherical-shaped dough stuffed with seafood carpaccio, meat or vegetables.

Named in honor of one of Palazzo Gaddi’s most distinguished guests, the poet John Milton, who was inspired to write his famed “Paradise Lost” during his stay in 1638, the Milton Bar is an all-day bistro and bar located in the hotel lobby. Guests can cozy up next to the large fireplace while savoring a menu of coffee, cocktails, light bites and hot entrées for lunch and dinner.

Tivoli Palazzo Gaddi Firenze, with its 86 rooms, including eight suites, is now the second signature Tivoli property in Italy, having officially opened this June following the opening of Tivoli Portopiccolo in 2023.
